

Caramelised Onion & Hummus
- 1 medium onion, thinly sliced
- 1 tbsp sunflower oil
- 2 tbsp granulated sugar
- 2 tbsp balsamic vinegar
- Half a can of chickpeas
- 1 tbsp tahini
- 2 garlic cloves, crushed
- A pinch of salt and pepper
- Juice of 1 lemon
- 2 tbsp olive oil
- 20 Nairn’s Cheese Oatcakes
Put the chickpeas, tahini, garlic, salt, pepper, lemon juice and 2 tbsp olive oil in a food processor and blend until smooth.
Put 1 tbsp of sunflower oil in a frying pan and then add the onion. Gently heat, whilst staring, for 7-8 minutes until softened. Add the sugar and balsamic vinegar, stir and cook for 3 minutes more on low.
Spread the hummus on the the Nairn’s Oatcakes
