Brie and cranberry with pecan dressing
That classic pairing with a deliciously crunchy side.

- 1 tbsp dried cranberries, roughly chopped
- 100g brie, cut in to roughly 1cm cubes
- 6 pecan nuts, roughly chopped
- 4 chicory leaves (or lettace leaves)
- For the Dressing:
- 1 tsp. white wine vinegar
- ¼ tsp Dijon mustard
- salt
- pepper
In a bowl whisk together the ingredients for the dressing
Stir in the cranberries, brie and pecan nuts
Place a lettuce leaf on top of an oatcake and top with a spoonful of the cranberry, brie and pecan mixture
Repeat with the rest of the mixture and serve
