


Pizza Oatcakes - Tomato, basil & vegan cheese

Overview
Simple but delicious. This recipe is from our guest author @life_by_ms_lewis. Serves 2-4 as a light bite.
Ingredients
- 8 Nairn's Oatcakes (This recipe used Nairn's Organic Oatcakes)
- A handful of vegan cheese shreds
- 5-6 cherry or salad tomatoes cut into thin slices
- Fresh basil leaves
- Olive oil
Instructions
- Add a large basil leaf, or several small leaves to each oatcake
- Arrange the tomato slices onto the oatcakes, covering the edges
- Add a sprinkling of cheese on top of each tomato in a heap
- Drizzle with a little olive oil
- Place under the grill on a medium heat, keeping an eye on them
- When the tomatoes have softened and the cheese is melted, remove them and sprinkle a tiny amount of cheese and allow this to melt
- Add another basil leaf to each and a final (optional) drizzle of olive oil and serve
